Muffin Monday : Jam Filled Muffins

Can you imagine looking forward to Mondays?

I do. There are few reasons :-

1. In this part of the world (Bahrain), the working week starts on a SUNDAY.  Incredible isn’t it? So it is all about ‘SULLEN SUNDAYS’ and Monday means  I am a little closer to the weekend ( which are FRIDAY and SATURDAY).

2. I am a stay-at-home mum and I am on duty 24X7 looking after my daughter. I never get an off. So Sundays or Mondays or Tuesdays or any day don’t really matter to me.  I enjoy what I do which is spend time with my daughter and my days just fly and meld into each other. There are days when I have no clue about the day or the date. Time flies when you are having fun, they say. They speak the truth.

3. The biggest reason of them all – it’s that day when all the Muffin Monday posts come up!!

This Monday, Anuradha of BakerStreet invited us to bake Jam filled Muffins which are simple to put together and kid friendly. Oozing jam and soft muffins are such a great match. The recipe is from

Recipe for Jam Filled Muffins


1 and 3/4 cups Flour

1/2 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

2/3 cup milk

1/3 cup butter or margarine, melted

2 eggs

1 teaspoon grated lemon peel

1/2 cup jam  ( I used peach jam)


1. Preheat the oven to 400F

2. In a large bowl, combine flour, sugar, baking powder and salt.

3. In another bowl, lightly beat eggs, milk, butter and lemon rind.

4. Pour into the dry ingredients and the stir until moistened.

5. Spoon half batter, make a well, add jam, spoon the remaining batter and bake in a preheated oven for 20-25 minutes until the top is golden.

I followed the recipe as it was given and added jam of my choice, which was a very sweet peach jam. I used it sparingly as it was quite sweet. But after baking, I wished I hadn’t been that stingy. Anyhow, that would my big note for the next time, since this was the first time I was filling something within a batter and baking.

Taking photos was fun as I had my daughter trying to thwart every single attempt of mine to get a good shot. After more than 60-70 odd clicks I managed to get a few. She was really enjoying eating the lemon rind off the spoon and licking the jam side by side.  She also had a jolly time imitating me clicking photographs.

Mimi, my daughter goes to a playschool now. So I have two hours to myself to indulge on some jam filled muffins and a hot cup of black coffee.

  1. Ooh, didn’t realise jam filled muffins could be this easy. i remember liking jam filled donut when in London. I should get myself some muffin moulds soon to try out your monday recipes now. Mimi looks like she is enjoying her food, is that grated cheese?

  2. Love muffins, I used to have one every so often from the food trucks on the street in NYC before work. Would totally kick start my morning. These jam ones look like just what I need to get me going at work right now (clearly this comment is testament to the fact that I’m not getting much done!)

  3. I love the idea of Sullen Sundays, LOL! Your muffins also look good with that jam filling. As for little Mimi, well what can I say except that she is most adorable! I could eat that jam and the lemon rind by the spoonfuls too…haha.

  4. I like that idea of sunday start.. here now the whole week is working by the time i stop work othr offices and shops close.. and on sundays they dont open .. SO it wud be a good idea to get day of during week ..

  7. New reader. Your daughter is precious and I love allrecipes. I am a stay at home mom too and before my kids went to school every day was Saturday!!! (to them at least)

  8. That is interesting about the start of the week begins on Sunday. I think it makes sense….but I see your point about looking forward to Mondays for makin’ muffins. It is the perfect breakfast food, to me. You’ve inspired me and I just may make some this morning! 🙂

Hmm, I’ll wait until I have enough time to read through all the missed chapters and enjoy it at leisure. I decided to comment on this one in particular after seeing sweet Mimi’s photos. MashaAllah, she’s so adorable Anita. I still remember her coming to me with a smile on her face. Squeeze her for me, will ya?

    This whole idea of Monday muffins sounds interesting, need to check it out when I have more time.
